    December 2007

This year, make some  Edible Christmas Potpourri, a snack mix that not only looks like real potpourri when you put it in a bowl, but that smells like peppermint.

    Edible Christmas Potpourri

    ½ pound white chocolate coating
    ¾ cup paramount crystals (divided)
    3 cups cornflakes
1 bottle oil of almond (divided)
½ pound light green chocolate coating
    3 cups Crispix cereal
½ pound dark green chocolate coating
    3 cups Raisin Bran cereal
½ pound dark red chocolate coating
    3 cups Kix cereal
    1 bottle peppermint oil (divided)
    ½ pound mint-flavored chocolate coating
    3 cups broken stick pretzels
    1 cup dry-roasted peanuts (optional)
    1 cup chocolate-covered peanuts (optional)

Prepare corn flakes mixture: In microwave-safe medium bowl, melt together white chocolate coating and 3 tablespoons of the paramount crystals. Stir in 15 drops of oil of almond. Pour over cornflakes in large bowl and stir well. Spread out on baking parchment to cool and dry, scraping bowl well.

Prepare Crispix mixture: In microwave-safe bowl, melt together light green chocolate coating and 3 tablespoons of the paramount crystals. Stir in 15 drops oil of almond. Pour over Crispix in large bowl and stir well. Spread out on baking parchment to cool and dry, scraping bowl well.

Prepare Raisin Bran mixture: In microwave-safe bowl, melt dark green chocolate coating and 3 tablespoons of the paramount crystals. Stir in 20 drops oil of almond. Pour over Raisin Bran in large bowl and stir well. Spread out on baking parchment to cool and dry, scraping bowl well.

Prepare Kix mixture: In microwave-safe bowl, melt dark red chocolate coating and 3 tablespoons of the paramount crystals. Stir in 15 drops peppermint oil. Pour over Kix in large bowl and stir well. Spread out on baking parchment to cool and dry, scraping bowl well.

Prepare pretzel mixture: In microwave-safe bowl, melt mint-flavored chocolate coating and 3 tablespoons of the paramount crystals. Stir in 10 drops peppermint oil. Pour over broken stick pretzels in large bowl and stir well. Spread out on baking parchment to cool and dry, scraping bowl well.

When all mixtures are cool and dry, carefully break into pieces. In large container, toss gently to mix together. Add peanuts or chocolate-covered peanuts, if desired. Stir again and serve. Store in airtight container. Makes 15 to 17 cups.
